Fried Pies
There is a famous little spot (I know it's famous, because I read about it in the newspaper once) that sells fried pies on the border of Texas and Oklahoma called....wait for it....wait for it...The Fried Pie Company.
I've been. I've tried. I liked. I attempted to creating my own little pie company in my house.
This is my first attempt at making some of my own (using lots of internet research, I love this recipe). They are yummy, therefore, it will not be my last.
It's a pretty simple three part recipe:
INGREDIENTS
2. c. Cooking Oil
DOUGH
Buy 2 cans of biscuits (the non-flaky kind).
FILLING
Use a sauce pan to heat 1/2 c. light brown sugar, 1 T. flour, 2 (beaten) eggs, 1/2 c. light corn syrup, 2 T. butter. Bring to a boil, then lower heat. Mix well, boil and stir constantly. Reduce heat to medium. 6 minutes (until thickens). Stir in 1/2 c. chopped pecans.
(You can also use a canned fruit pie filling instead.)
GLAZE
In a saucepan, stir together 2 T. butter, 1 c. powdered sugar, 1 T. milk, 1/8 t. vanilla.
DIRECTIONS
Roll out dough to about 5 inches. Place 2 T. of filling on 1/2 of dough, but don't bring to the edge.
Fold in 1/2 and seal edges with a fork (don't overfill).
Drop pies into oil. Flip when one side turns a golden brown, brown second side, and then pull out quickly. This does not take much time AT ALL so don't walk away. If they are not sealed well, some of the filling may spill out, be careful for popping grease. (If they do open up, this just made the pecans crunchy and yummmy, no tragedy on my end!)
Pour glaze over pies, and serve.
I love pecan pies, but most of the pies at the restaurant are actually filled with fruit, and sprinkled with powdered sugar instead of the glaze. It gives me something to look forward to-cooking variations of fried pies-a new hobby of mine!
