July 4th: Amish Macaroni Salad

Friday, June 17, 2011
My macaroni salad post now equal my pimento cheese post.  I can't explain it.  I see a new recipe.  I. Must. Try. It.  I saw this recipe for Amish Potato Salad on Bettierocker.  It has dill pickles.  Yes, please.
I made it, I love it, I'm making it for July 4th.  I think pasta salad is one of my favorite 4th foods.
Ingredients:
3 c. uncooked elbow noodles (1lb), 3 celery stalks (chopped), 3 boiled eggs (chopped), 1 small onion (chopped), 1 red bell pepper (chopped), 2 whole dill pickles (chopped), 2 T. dill relish, 2 c. Miracle Whip , 5 T.  yellow mustard, 2 1/4 t. white vinegar , 3/4 t. celery seed ONLY TO TASTE:  about 1/4 c. sugar , salt, pepper, paprika
Instructions:
1. Boil pasta as directed on box.   Drain.
2. Add all ingredients EXCEPT sugar, pepper and paprika.
3.  Mix.
4.  Add sugar, salt, pepper, and paprika to taste.
5. Cover and chill at least one hour to overnight. As BR suggested, it does taste better the longer it sits together.  ...assuming it last that long.
