Pretzel Chicken

Thursday, June 09, 2011
I saw this recipe on Family Fun.  Chicken is 'my dish of choice' when it comes to meat, so I'm always looking for ways to jazz it up.  This one is a keeper.  It doesn't hurt that it's about the easiest meal I put together all week.
Ingredients:  1/4 c. light mayo, 1/4 c. dijon mustard, 1 1/4 pound chicken tenders, 3 c. hard pretzels (crushed).
Instructions:
1.  Mix mayo and mustard.
2.  Cut chicken into smaller (tender size pieces).  Place chicken in a shallow bowl, and cover with mayo/mustard mix.  Turn to coat, and let them sit in mix for 15 minutes.
2.  Crush pretzels (it's times like these I need a 5 year old because my efforts were a little lacking).
3.  Dredge in pretzel crumbs.
4.  Bake for 15 minutes at 425.

That looks tasty. I bet it would be good with those french fried onions instead of the pretzels too. :)
