Mr. Scott's Pecan Pie

Saturday, November 12, 2011
Last year, my pal Regan came to visit for the holidays, and she brought a few of her family recipes to share, including this Pecan Pie.  It is amazing!  This year she'll be holding, or getting ready to hold a new baby instead of making me this pie, but I have the recipe, so I'm gonna let her off...this year.  It has a super deep custard level, and we devoured it.  No pecans died in vain.
Mr. Scott's Pecan Pie Recipe
Ingredients:
8 eggs, 3 c. light corn syrup, 1 1/2 c. sugar, 2 T melted butter (cooled), 1 1/2 c. sugar, 1 t. salt, 2 t. vanilla, 1 pkg pecans (halved), pie crust.
Instructions:
1.  Preheat oven to 400
2.  In one bowl, lightly beat eggs, add sugar, salt, corn syrup, vanilla, and (cooled) melted butter.
3.  Mix in 1 c. chopped pecans.
4.  Pour mix into pie crust, and top with at least 1 c. pecan halves.
5.  Immediately after putting in oven, reduce heat to 350 and bake 50 minutes (until it does shake when you move the pie).

Is this a SAM's size "pkg" of pecans or what? That's unclear.

Hi Kelley,
It's two cups total. 1 c. goes inside the pie, one cup goes on top.
