Apple Cake

 I dedicated an entire week to apple flavored meals and crafts last year.  I guess you could say I'm sort of a fan, so when I saw this recipe for apple cake on bakerella, I had to add it to the to do list. I could have happily eaten the batter alone, but I showed restraint, and by the second batch I baked it...kidding.....but only because I couldn't calculate the number of times I'd have to run around the park to work off the batter, but when I baked it up and made it look like real food, I pretended it was an appropriate form of breakfast. 
Apple Cake Recipe
Ingredients:  3 c. of flour, 1 t. baking soda, 1 t. cinnamon, 2 c. sugar, 1 1/2 c. oil, 3 eggs, 2 t. vanilla, 3 c. diced apples, 1 c. chopped walnuts, 1 c. dates (chopped and rolled in flour, I actually found them in a bin at a nicer grocer story already floured up and ready to go)
Cake Instructions:  Sift flour, soda, and cinnamon in a bowl.  In a second bowl combine sugar, oil, the egg, and vanilla (just until combined).  Add flour mix.  Stir in nuts, dates, and apples.  The batter is VERY thick. 
Pour the batter into a greased and floured 9x13 pan and bake at 350 for 45 minutes.  Cool cake, poke holes with a skewer, and then making topping. 
 Topping Recipe:  1 c. brown sugar, 1/2 c. butter, 1/4 c. milk. 
 Topping Insturctions:  Mix 3 ingredients in a pan and stir until bubbling on the stove.  Pour over the cake.  I only used about 2/3 of the sauce because it was really wet.  It's sweet enough that it gave it a great flavor.
