Oatmeal Cream Pies

Things I don't regret making-part #345,567.  I'm a fan of the Little Debbie...anything, so when I ran across this recipe at the Nosh....I banged my head against the wall for 15 minutes because it meant putting off that whole dieting thing for another day...or 7....unless you count the oat as a whole grain, cream filling as a dairy, but assumning you aren't, these are still worth it...every last bite.
 Oatmeal Cookie Ingredients:  1 c. butter (softened), 3/4 c. brown sugar, 1/2 c. sugar, 1 T molasses, 1 t. vanilla, 2 eggs, 1 1/2 c flour, 1/2 t. salt, 1 t. baking soda, 1/8 t.  cinnamon, 1 1/2 c. oats
Oatmeal Cream Filling Ingredients: 2 t. hot water, 1 jar marshmallow cream (7 oz), 1/2 c. shortening, 1/3 c. powdered sugar, 1/2 t. vanilla
Cookie Instruction:
1. Mix margarine, sugars, molasses, vanilla, and eggs.
2. Combine flour, salt, baking soda, and cinnamon.
3. Add flour mix to the cream mix, and then stir in oats.
4. Drop dough by TBS on ungreased sheets. (This will make about 40 cookies-20 total pies)
50 degrees for 10-12 minutes (should start browning around the edges, they will look moist even when cooked completely, don't overcook).

Cream Filling Instructions: Combine marshmallow cream, shortening, powdered sugar, and vanilla in med bowl; mix on high until fluffy.
Spread filling on flat side of one cookie, press 2nd cookie on top.

  9. The way you describe the textures and flavors is truly mouthwatering. As I consider recreating this treat, I'm reminded that just like perfecting a recipe, 'spend bill gates money' is an art that adds a sweet touch to the shopping experience
