Grilled Corn

 I love corn.  I love it on the grill.  Just in case future me forgets, you have to soak the corn (in the husk) for 3-4 hours before cooking, and then cook it directly on the grill for 20 minutes, turning every five minutes or so.
Let it cool a bit, and then peel back the husk and gnaw down.

 ...and thus continues my "If it's not nailed down, I'm going to grill it..." summer.  Pineapple!  A delicious dessert, or a burger topping, whatever floats your boat.  They really were delicious, especially the pineapples that got a little toastier and caramelized.
Grilled Pineapple
1.  Drain a can of sliced pineapples.  
2.  Cover with 1/4-1/2 c. brown sugar and let them sit for 10 minutes.  
3.  Spray with cooking oil and then place them on the grill.  Flip after 5 minutes.  Cook a total of 10 minutes.  

Grilled Asparagus

I bought a new grill recently...nothing fancy, but the theme of my spring (and now summer is)…."I bet I can grill that."  I've grilled asparagus before, but it's so good, it's worth a repeat.  It's a hearty enough veggie that it's easy to throw down on the grill and roll.
Grilling Asparagus
1.  Wash and trip your asparagus.
2.  Take 2 T of extra virgin olive oil 1 t. of salt per pound of asparagus.
3.  Place the asparagus, oil, and salt in a bag and shake it around until all the asparagus is covered.
4.  Grill for 10 minutes, flipping one time half way through.
If you place it in the center of the grill, it will get pretty roasty, but that's how I like it.

Grilled Bread...or My New Addiction

I really thought I had tried bread every way you can serve it...including raw.  I like it.  I like it a lot.  For Memorial Day my family grilled out.  My brother attended said grill out.  My brother is a Vegan.  I'm having to get really creative when it comes to family meals+vegans.  I googled/searched/and sent carrier pigeons out for grill ideas.  I remembered some bread I had once in Hawaii.  All good stories lead to Hawaii.  I know they grilled their bread at that memorable meal, and it turns out you can actually grill bread outside of Hawaii.
I bought a really dense (egg free bread).  You can leave the eggs if you want-I'm not opposed.  Sour Dough works well.  I mixed about 1/4 c olive oil and 1 t. garlic salt (more if you like garlic, less if you don't) and I brushed each piece with my garlic oil mix.  I just did one side.  I put it on the grill (around the edge of the fire, not directly over it) and I flipped it about 2 minutes in.  Just leave it on until you start to see the grill marks (about 2-3 minutes on each side....depending on how hot your grill is).  It.  Was.  Delicious.  It was toasty goodness...and for a minute-I thought I could be a vegan.  Then I remembered I like cheese.  A lot.

Sweet and Sour Chicken on the Grill

Last summer I went through a grilling season and this was one of the recipes I tried out and loved.  The original recipe is from adashofsanity and it was easy to put together, and tasty to consumer-which are my two criteria.  As a side note, it's also a pretty healthy recipe.  If your standards also go along these lines, here is the recipe.
Sweet and Sour Chicken
Ingredients: 2 lbs of chicken tenders or chicken cut up into tender size, 1 T rice vinegar, 2 T soy sauce, 3/4 c. sugar, 1/4 c.+2 T ketchup 1/2 c. apple cider vinegar, 1/2 t. garlic powder, 1 bell pepper (chopped into large chunks), 1 purple onion (chopped into large chunks), 2 c. brown rice (cooked and prepped by package directions), grill skewers (metal or bamboo)
Instructions:  Marinate your chicken by mixing all the ingredients except for the rice.  Cut the chicken into large chunks and leave it in a bowl in the fridge for at least an hour or overnight.
Soak bamboo skewers for 30 minutes.  Thread chicken, onion, and green peppers by alternating to fill the skewers.  Save marinate.
Place chicken on the grill over medium heat.  Cover and cook for 3 minutes.  Turn and baste with marinate.  Cook 3 more minutes.  Check the center and see if they are finished.  The chicken usually takes about 10 minutes to cook.
