Pretzel Rolls

Tuesday, September 27, 2011
One of my friends recently had a baby.  She  talked about these pretzel rolls her sorority mom provided  in college that she loved along with luncheon meat.  She had steered clear of processed meats during her pregnancy, so a group of us decided to bring her and her husband sandwich fixings and salads to fill in whatever meals others weren't provided.  I found a recipe for pretzel rolls at Tasty Kitchen and I gave it a go.  These were great, and I bet my friend would have liked them too...if my dog didn't eat absolutely every single roll except for the one I ate testing out the results.  15 rolls that little big pill, Max ate.  Story of his life.  You pretty much have to store stuff on Mars if you don't want him to find a way to pull it down and inhale it.  Here's the recipe for some great rolls, 1 out of 1 dogs agree.
Pretzel Roll Recipe
Ingredients:  1 1/2 c. (110 degree) water, 1 pkg yeast, 2 t. sugar, 4 1/2 c. flour, 2 t. kosher salt, 4 T. butter (melted), 1/4 c. baking soda, 1 whole egg, kosher salt.
Instructions:  Dissolve yeast in water (5 min).  Pour in next 4 ingredients (through butter).  mix with dough hook until combined.  Cover dough with a towel and let rise 1 hour (doubled in size).  Dived into 16 pieces. Create balls.  Place on a tray, cover and rise for 30 minutes.
Bring a pot with 2 qts of water, and 1/4 c. baking soda.  Place rolls in simmering pot for 30 seconds.  Flip to second side for 30 seconds.  Place back on tray.
Brush rolls with egg and sprinkle with salt.  cut an x on top.  Bake at 425 for 15-20 minutes.
Store on Planet Mars so your dog won't eat them before you do.  This is a very important step or you will find yourself at the grocery store before work the following morning trying to replace them for the meal you've scheduled to take to your friend.

I am down for ANY type of bread and those look scrumptious. Maybe one day I'll try 'em.

Could you make the dough in a bread maker?

411...I've never tried a dough machine, but I would think you could follow the process up until dunking it in water and baking. Let me know if you try it out!
