I've got quite a collection of gingerbread themed crafts and recipes. I've put them on this board and have several more to add. I love everything gingerbread-the taste and the cute little look of those little cookies. I tried out these pancakes and Oh. My. The original recipe came from Good Housekeeping. I approve...and I know my way around a pancake or two. It's like having cookies. For breakfast. Seriously, does life get any better? Don't get me wrong, I'll have the real thing (cookies) for breakfast, but now people won't look at me funny if they join me for breakfast. Nevermind, they'll still give me a funny look, but it won't be because of what I'm eating.
*makes 20 4 inch pancakes
Ingredients: 3/4 c. whole wheat flour, 1/2 c. white flour, 2 t. baking powder, 1 t. cinnamon, 1 1/2 t. ginger, 3/4 t. cloves, 1 T. brown sugar, 1/2 t. salt, 1/4 t. nutmeg, 1 1/3 c. milk, 1 T. molasses, 3 T. canola oil, 1 egg, maple syrup to top
Instructions: Mix all dry ingredients. Add milk, oil, molasses, egg until the dry mix is just moist. Let sit for 10 minutes. Heat a skillet with a pad of butter. Pour in batter and cook as you would any pancake. Serve with maple syrup.
