Ingredients: 2 pkgs of frozen cheese tortellini (about 36 oz total), 3/4 c sun dried tomatoes (drained and chopped), 1/2 c. prepared pesto, 1 c. Parmesan cheese (freshly shaved), 1/2 c. red onion (chopped)
1. Prepare tortellini according to package instructions. Rinse with cold water and let it cool.
2. Combine all the ingredients. Serve, or chill and serve at room temperature.
