Grandma Davidson's Apple Cake

My friend Sonia shared her husband's grandmother's recipe for apple cake with me.  These are the recipes I treasure most....way beyond the internet recipes sites missing the stories behind each recipe.  I love knowing the family behind the traditions.  I imagine there were a lot of laughs while the family consumed this cake....and it helps that it's really a delicious cake.  It seemed like the perfect time to whip out this recipe and share it as apple season is just around the corner! 
Apple Cake Recipe
Ingredients:  3/4 c. sugar, 2 c. flour, 1 t. cinnamon, 1 t. baking powder, 1/2 t. salt, 4 c. apples diced small, 1 c. chopped nuts, 1 t. vanilla, 1 c. oil, 3 eggs. 
Instructions:  In a large bowl mix all but the apples and nuts.  Mix well.  Add nuts and apples and pour into a greased 9/13 pan.  Bake at 350 for 45 minutes.
