Camping: Smore Cake In-A-Jar

Monday, July 09, 2012
This post flew around the web last summer, and is it an wonder?  Jars+any food on the food pyramid=greatness.
The recipe is really easy.  This is a great cake for travel as well that can be completed on a camping trip, or as a giveaway.
Ingredients for the Graham Cracker Layer (enough for 4 16 oz mason jars)
1 1/2 c. graham cracker crumbs, 1/2 stick butter, pinch of salt
Instructions for Crust Layer
Preheat oven 350 degrees.
Melt butter, mix in graham crumbs and salt until moistened. Spray 4 mason jars with non-stick spray and press cracker mix into jars. Press the crumbs down firmly with the flat bottom of a clean screwdriver.
At this point I decided just to use a boxed chocolate mix.  I mixed it up as instructed.  I filled each jar halfway full (no more).  You will have left overs for cupcakes.
Place the jars in a pan, fill the bottom of the pan with 1 1/2 c. water.  Bake for 30 minutes (or until cake is set).
Remove and add large marshmallows to the top.  Press as many as you can inside the jars.  Heat the broil and broil for 1-2 minutes.
*You can also stop at the cake part, let it cool.  Add marshmallows, but don't broil.  Put lids on the jar, and give them to friends with instructions for finishing, OR take these on a camping trip, heat the marshmallows over the fire and add them to the cake jars to complete the treat.
