A year ago (plus) I had the most amazing Cornbread EVER in Salem, MA. It tasted like yellow cake mix, with the consistency of cornbread. I saw this recipe on sister's dish and it sounded just like what I had eaten. Oh. My. Gosh. It is delicious. I love my cornbread sweet, and this is my very favorite version thus far. Give it a try...it really is amazing, and the perfect addition to a chili bar now that the fall is in full swing (at last on the aisles of the grocery store indicate). Bonus-it's so stinking simple to make. I halved it, but the full recipe is just 2 boxes of jiffy cornbread mix and 1 box of yellow cake mix. Prepare them as the box indicates and then add them together. Pour into a greased pan (9x13) and bake for 30 minutes at 350. If you half it (jiffy also sells a cake mix in the cornbread size-so you can do a 1 1 ration, or just use half of a cake mix and save the other half for, like, the next day when you are out of the first batch and want more.
