SMORE Bites

 Hello, summer!  I actually made these LAST year, but....I got behind in life and I'm just now posting.  There were so easy to put together and really delicious and a little bit LESS messy way to enjoy a smore.  

Ingredients:  1 c. graham cracker crumbs, 4 T melted butter, 1/4 c. powered sugar, 12 marshmallows (cut in half), Reese's peanut butter cup or Hershey chocolate.  

Instructions:  

1.  Heat over to 350.

2.  Mix the crumbs, sugar, and butter.  Spoon the into 24 mini muffin cups and press them to the bottom and sides like a small pie shell.  

3.  Bake for 5 minutes.  Remove them and place a Reese's peanut butter cup or 2 piece of Hershey chocolate squares in the 'cup.'  Cover with the 1/2 marshmallow (cut side down).  

4.  Place over on broil and put them back in for 1-2 minutes.  Remove them as they start to brown.  

5.  I added a little melted chocolate to the top as well when they cooled.  

6.  Eat and repeat.

 Last week, we wrapped up our year of Secret Sister...a little different.  We usually do a fun "3 Clues" happy hour, but this year we just did a porch exchange, with our name attached.
 My secret sister likes to travel, but....quarantine.  So I tried to put together a bucket of things for adventures near or far.  I put in a picnic blanket, a monogramed coffee....or wine cup, and then all the stuff for making smores.

 The only time this tray 'o smores was outside was for a photo.  The thing about Texas summers....They.  Are.  Hot.  And this summer, because of a warm winter the bugs are out and about, and I don't want any of it!  We did this for dessert when my family was visiting a little over a month ago.  I included all sorts of chocolates, peanut butter, sticks, marshmallows, crackers etc.  You could certainly take this to the 10th degree with a selection of fruits, flavored marshmallows etc, but we mostly just ate candy bars with a side of marshmallows.  We sat in the air conditioned house and roasted our marshmallows with kabob sticks.  I lit up one of these warming cans-set in a bucket of salt (I didn't have any sand), and....
 I taught Blythe how to do this as well.  It turned into a marshmallow 'wand.'  Works for me. 
 I made her a marshmallow sandwich.....obviously, I'm in charge of teaching her the important life lessons.

I love making little gifts for my friends/and in particular, their kiddos.  I heart the idea of this little gift, and it doesn't hurt that it's tasty.  I think it's a perfect treat to celebrate the upcoming summer.  I originally saw it here, though I've seen it quite a few places since this time, this was my original spotting!  I used a different recipe (to follow) to sample this before I sent it out.  What kind of friend would I be if I didn't sample a dessert first?  I also halved the following recipe to fit in smaller ball jars when I ran out of big ones.  :O) 
 The full smore recipe (attached to the jar).  1 1/2 c. teddy grahams, 1 1/2 c. marshmallows, 1 1/2 c. milk chocolate morsels.  Mix with 1/2 c. (packed) brown sugar in a (9x9 inch) pan.  Drizzle 1/2 c. of melted butter over the mix and bake for 10 minutes at 350...
 It will look like this. 
 Cool and then cut into squares for bars of (cute) smore goodness.
