Snack Trays

Tuesday, April 27, 2021 1 comment

Last year, when we were in full quarantine mode, I found lots of links to things like 'snack trays of the day.'  Basically, a portable charcuterie board.  I found this tray on the net, I think it's rubbermaid?  It even came with a removable bowl in the middle and a clear lid to store it all in.   I started building a new mix each week so that I would have a place to when I was hungry....which hopefully wasn't a cookie.  I figured if I had access to ready to eat healthy foods, I would grab it.  Stay tuned b/c then life hit and I lost track of that, BUT I did save a picture of each one I put together at the time so I'd remember some combos when I was looking for something new.  So, dear future me, here are some ideas for snack trays.  You liked these combos.
Tray 1:  Dark chocolate covered nuts, hummus, sweet peppers, tomatoes, strawberries and blueberries.
Tray 2:  Pretzels, celery, grapes, mixed nuts, and spicy ranch dip (which is the fiesta ranch packet sold near the salad dressings mixed with sour cream).
Snack Tray 3:  Looks like you still have some mixed nuts, apples, oranges (bagged and stored separate so everything doesn't smell like oranges), laughing cow cheese and Nut Thins
Snack Tray 4:  Salama, jalapeno cheese, water crackers, ranch dip, celery, cucumber, tomatoes.

DIY Charcuterie Board

I made 12 of these as a part of a bigger project I HOPE happens this summer.  I did some research to find out what kind of wood makes the best cutter board, or-charcuterie board-whatever the purpose this will take.
I bought some wood via Etsy, but when I proudly showed the slice to my brother he said it was wormy-which was fine with me, but he was able to get my some scraps (with his bosses permission), BUT-just a tip-if you are looking for wood and don't want to use your whole stimulus check-check out a place that works with wood (door stores etc) and see if they have scraps.  I cut down the slices, and some of them had splits (which was why they were rejects), so I tried to cut some fun shapes.  I'll move to fun handles etc on my next round.
My brother let me borrow a drill bit and he showed me how to drill a hole, but then made me do the rest.  You drill half way (on another board below) until the tip pokes through the bottom, then turn it around and drill from the second side until the whole pops out.
I sanded down the boards and rounded off the corners.  Quality control swung by and licked saw dust like a weirdo.
I then used mineral oil and rubbed it all over the board and they are ready to roll.

Easter Charcuterie

How about a little Easter charcuterie?  I live near a Great American Harvest Bread Company that sells little bunny breads near Easter (not an add). I picked one up this weekend and then emptied out my fridge to make a themed lunch because cute lunches are better.
Nutella and strawberries, cucumbers and spicy dip, cheese, turkey, and butterfly crackers.  Boiled eggs and carrots would be a fun addition too, but....I'm working with what I have!
