- This summer I 'needed' cookie dough. I do NOT 'need' the calories, but....sometimes you have to compromise. My friend was telling me she made a cookie dough with no eggs you can eat raw and she tosses it in ice cream...or on a spoon and then into her mouth. I googled and found a single serving recipe (probably the equivalent of 2 cookies). Uhh...YES please. This taste soooo good. It's a great recipe, not so great for the diet, but....better than a whole batter....until you make it two days in a row. If you are in need of cookie dough, for a party of one-this ones a winner.

Single Serving-Low Calorie Ranch Tortilla Chips....True Story

I'm a fan of chips, but there is something about an open bag in my possession that becomes a problem. Interventions are staged. Tears are shed. It's never a good thing. So, someone shared this recipe with me this past summer and....oh my, it solved so many of my problems! You can make a single serving, for just a few calories and the men with the straight jackets, and Dr. Drew and the camera crew take their winter filming schedule elsewhere. Basically, grab some low calorie corn tortillas. Spray a pan with some cooking oil spray. Cut your tortilla into 8 triangles, spray the tops and then sprinkled it with the powder from a package of ranch dressing seasoning and bake at 400 degrees for about 6 minutes (until crisp). The calories only come from the tortillas. I've found some that run about 30 calories each, so 16 chips=60 calories (give or take), or 2 WW pointsplus. As far as how much ranch seasoning....I guess that depends on your love of the ranch flavor. I love it, so I use almost half of a regular package on 4 total tortillas. No diets were harmed in the making of these potato chips.

Brownie in a Mug

I pinned this awhile ago, here is the original source. Sometimes, you need dessert. Yes, need. I used to buy those cakes you just added water to and made in individual portions. They are so pricey, it was time I either came up with a new solution, or started selling organs to purchase them. This brownie is equally as good, add syrup, ice cream, caramel....whatever, and it fills my need for sweets without requiring I then try to talk myself out of eating a pan of brownies, which never ends well. So....for one brownie in a mug-mix 1/4 c. sugar, 1/4. c flour, 2 T. cocoa, pinch of salt, 2 T. olive oil, 2 T. water. I mixed it in the mug itself, then you just pop the whole cup into the microwave for 1 min 40 seconds and, ta da. Sweet tooth eliminated without totally crashing a diet.
