One Pan: Bacon and Biscuits

These aren't blog quality photos, but I'm just over here living real life and I want to remember this trick. I have a friend who is a GREAT cook and she is always telling me about tricks she does. I've been wanting to try this one out forever, and it did not disappoint.
-Take a large sheet of foil and line a pan. Place bacon on the pan (not touching). Place it in your cold oven, turn it to 400 degrees and bake for 20 minutes.
-Pull out your back. Take frozen biscuits and dip them in the biscuits-dip both sides in the pan and cook according to directions in the same pan. You don't need to soak up the grease, the biscuits are doing that for you (unless you just have ridiculous amounts, but....we are already kind of being ridiculous).
-Cook according to your bags instructions.
These turned out so delicious. It's definitely not healthy, but sometimes...that's the best kind of breakfast.

Bacon Jalapeno Bites

I have a favorite jalapeno recipe I take to a lot of pot lucks. This week, I brought a few dishes to a bbq themed birthday party for a friend. The hostess was already making corn bread (which my favorite recipe is stuffed with), but I wanted to bring some jalapenos, so I brought this recipe, which is also delicious....because....bacon.
It's super easy-jalapenos, 1/2 c. cream cheese (softened), 1/2 c. sharp cheddar cheese, and 12 pieces of bacon.
Cut the jalapenos in half.
I use gloves to remove the seeds and the white innards. Mix the two cheeses and stuff 1/2 of the jalapeno with the cheese mix and then place the other slice back on top so the jalapeno is 'whole' again.
Wrap a slice of back around each stuff jalapeno.
Line a pan with foil. Bake for 20 minutes at 400 degrees (until bacon is crisp).

Bacon and Egg Asparagus Salad

You guys. This. This was sooooo tasty. I usually prefer my vegetables roasted, but I decided to try out this recipe from skinnytaste because....well, bacon. Apparently if you get Whole30 approved bacon and Dijon this works in that program. I'm not doing anything whole30, but if all the food taste like this I could be convinced!
Ingredients:
1 hardboiled egg (peeled and sliced)
1 2/3 c. chopped asparagus
2 slices of bacon (cooked and crumbled)
1/2 t. Dijon mustard, 1 t. extra virgin olive oil, 1 t. red wine vinegar, pinch of salt and pepper
Instructions:
1. Bring a pot of water to a boil. Add the asparagus and cook for 3 minutes (tender, yet still a little firm). Drain and run under cold water to stop the cooking.
2. Mix the Dijon, oil, vinegar, salt and pepper in a separate bowl.
3. Top asparagus with bacon, eggs, and drizzle with the vinaigrette.

Bacon Cracker Appetizers

These are, seriously, the easiest appetizers ever, and SOOOOO delicious. I was a skeptic because I'm not a huge fan of meat, in particular bacon. I know, I know....scary. But....with the brown sugar sweetness, this is just the way I like my bacon...with carbs. You can make these trays up in advance and pop them into the oven through a party, or while you are home alone and nobody can see. The best part is they literally make a million.
All you need is...
bacon (get the thin/cheaper kind, I know....wow?), club crackers, brown sugar, and cayenne pepper.
Then you....
The original recipe used a wire rack (like a cookie cooling rack). I have one of those. I have no idea where it is currently living, so.....I used a mini muffin pan.
I lined up my crackers and cut my strips of bacon into sixths (just long enough to cover the cracker).
I thin mounded brown sugar on top of the bacon (this helps keep it from curling, and gives it a sweet taste). Sprinkle a teeny tiny bit of cayenne on each one (unless you are brave, don't over do that).
Bake at 350 for about 13 minutes. Remove, cool. Eat. Repeat.
